Masoor dal is available in two primary forms, each offering unique textures and cooking properties:
- Split Red Lentils (Masoor Dal / Dhuli Masoor): This is the dehusked and split version, which reveals a vibrant orange-pink hue. It cooks exceptionally fast without any prior soaking and breaks down into a smooth, creamy consistency, making it perfect for quick everyday dals, khichdi, and comforting soups.
- Whole Brown Lentils (Sabut Masoor)
: This variety retains its outer brownish-black skin. It has a distinct, rustic, earthy flavor and holds its lens shape well after being cooked. It requires a bit more time to cook and benefits from a short soaking period before boiling.
